Wholesome Meals, Straight from Our Nebraska Roots

Chicken Alfredo –

At Ellsworth Crossing, we believe that the best meals come from simple, wholesome ingredients and a genuine love for serving others. Our mission is to provide our community with the finest farm-to-table products, offering not just food but also the nourishment of the soul through authentic Nebraska values. Today, I’m excited to share one of my family’s favorite recipes: Easy Chicken Alfredo. Made with high-quality Plum Creek free-range chicken, this dish combines rich, creamy flavors with the goodness of responsibly sourced ingredients.

The Ellsworth Difference
When you cook with ingredients from Ellsworth Crossing, you’re getting more than just food—you’re supporting a local, faith-based, veteran-owned business that values integrity and quality above all else. Our Plum Creek Chicken, raised right here in Burchard, Nebraska, exemplifies the difference small-scale farming makes.
Unlike the commercial operations you’ll find at big box stores, our chicken is hormone-free, nitrate-free, and raised with access to the outdoors, ensuring the humane treatment and superior taste we’re known for. It’s the reason top chefs in Omaha and Lincoln love Plum Creek Chicken—and why we’re so proud to bring it to your table.
The Joy of Gathering Around the Table
Family dinners aren’t just about the food; it’s about coming together, sharing stories, and making memories. This Easy Chicken Alfredo recipe is perfect for those moments. It’s simple enough for a weeknight dinner yet elegant enough to serve when hosting guests.
Let’s dive into the recipe and create something special!
Easy Chicken Alfredo Recipe
Ingredients
  • 1 pound Plum Creek boneless, skinless chicken breasts
  • 12 tablespoons salted butter, divided
  • 1 tablespoon minced garlic
  • 2 tablespoons all-purpose flour
  • 1¼ cups heavy whipping cream
  • 1½ cups whole milk
  • 1 cup Parmesan cheese, shredded
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • 16-ounce package of fettuccine
  • Fresh parsley, finely chopped

Instructions
  1. Cook the Pasta
  2. Start by cooking the fettuccine according to the package directions. Drain and set aside.
  3. Cook the Chicken
  4. Heat 6 tablespoons of butter in a large skillet over medium heat. Add the chicken breasts and cook until browned on the outside and no longer pink in the center. Set aside and cut into strips or cubes.
  5. Prepare the Sauce Base
  6. In the same skillet, melt the remaining 6 tablespoons of butter. Stir in the minced garlic, garlic powder, and salt. Whisk until combined.
  7. Create the Alfredo Sauce
  8. Sprinkle the flour over the butter mixture, whisking as you go. Gradually add the heavy cream and milk, whisking continuously. Bring the sauce to a gentle boil, then reduce the heat to low and let it simmer for 2–3 minutes.
  9. Add the Parmesan
  10. Stir in the Parmesan cheese until melted and smooth.
  11. Combine and Serve
  12. Add the cooked pasta to the skillet, tossing it in the sauce to coat evenly. Top with the chicken, garnish with fresh parsley, and serve hot.

Optional Add-Ins
Make it your own by adding steamed broccoli, asparagus, or spinach. For seafood lovers, shrimp or scallops make excellent additions.
